Since the holidays are upon us, I thought I’d share this Chocolate Low Carb Vegan Fudge recipe with all of you. I have been making it for several months now because I have been eating a vegan keto diet.

You will still see recipes with bread and other high carb foods interspersed between the low carb posts since I have about three months worth of recipes waiting to be posted.

Low carb vegan kind of sounds like an oxymoron, doesn’t it! Normally I eat beans, grains, and other foods that have a good amount of carbs in them.

In the past you would find me substituting a lettuce wrap in place of bread, or cauliflower rice in place of regular rice, so that part hasn’t changed much.

The biggest adjustment has been with beans, fruit, and hidden sugars. I haven’t been eating beans, except for edamame. I plan on adding other beans back into my diet, but at a smaller quantity then I ate before.

Bananas are my go-to fruit for smoothies. Now I use raspberries or about a quarter to a half of a banana instead of a whole. I have to use a lot less sweetener in a recipe, or use a sugar free substitute.

Since I started eating this way I have had NO allergy symptoms. I looked at the calendar one day and realized that the Fall allergy season came and passed.

I have had bad allergies both during the Spring and the Fall. It has been so bad in the past that I have been bedridden. I wasn’t really planning on eating this way long term, but considering how great I feel, I may stick with it.

Besides eating low carb, I have been eating high fat – the keto diet for those of you who are familiar, but veganized. I have been eating good quality fats like avocados, coconut oil, and almond butter.

This Chocolate Low Carb Vegan Fudge falls into the fat bomb category for those of you on a keto diet.

I first tried this recipe using stevia, which is not my favorite sugar free sweetener because it can be bitter if you use too much of it. I have gotten used to the taste, but still prefer erythritol or a very small amount of dates or agave syrup to sweeten recipes.

This fudge has a dark chocolate taste to it, so it isn’t too sweet. It goes well with almond or peanut butter. Just break up some fudge into the nut butter, sprinkle on a little salt, and eat by the spoonful!

Chocolate Low Carb Vegan Fudge

Makes 12

Ingredients

  • 1/2 cup cacao or cocoa powder
  • 1/2 cup coconut oil, melted
  • 1/4 cup full fat coconut milk
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 teaspoons erythritol or 15-20 drops stevia
  • pinch salt

Instructions

  1. If using erythritol, heat all ingredients in a double boiler or microwave until erythritol is dissolved. Mix all ingredients thoroughly.
  2. Fill either ice cube trays, muffin liners, or a plastic wrapped lined storage container. Refrigerate.
  3. Once cooled, if using the plastic wrapped lined container, pull fudge out and slice on a cutting board. Store in the fridge.
