Before we get to the recipe lets talk a minute about why I stated “Wild Caught Alaskan Salmon”. Wild Alaskan salmon is a powerhouse of nutrition. They are a rich source of vitamins such as B-6 and B-12 as well as the minerals selenium, magnesium and phosphorus. There is a lot of research going on at this time about our bodies need for magnesium and the fact that most people are not getting enough in their diets. To get all these benefits you need to be sure that you purchase “Wild Caught” and not farmed salmon. Of the wild caught salmon on the market, Alaskan salmon is the best choice.

Wild sockeye salmon have bright red flesh, whereas farmed salmon are usually pale pink. But still check the label because I have seen labels that say “color added”. If I see that, it is a sure sign that it is farm raised. It is becoming harder to find wild caught fish that are not contaminated with mercury and no longer the best choice on the market. Wild caught Alaskan Salmon is one of the best choices available.

  1. Heat farm fresh butter, basil and mustard in a small saucepan until butter is melted.
  2. Squeeze in lemon.
  3. Brush both sides of the salmon steak with mixture.
  4. Grill fish over medium hot coals on an outdoor barbecue grill for 8 -12 minutes or until fish begins to flake.
  5. Serve with a vegetable or salad of your choice.

Enjoying fish a couple of times a week helps to get the amount of omega-3 fatty acids the body needs. However, the ocean has become the worlds dumping ground so there is a limited amount of wild caught fish that you can enjoy without worrying about the mercury content in the fish. At one time Tuna was one of my favorite fish but it is now on the do-not-eat list for that very reason.

We live in Puerto Vallarta close to a small fishing village so we can go to the dock and wait for the fishing boats in the morning and purchase wild caught fish directly from the boats. We choose the small fish that have not had as much time to become contaminated with mercury. When we are at our home in Wisconsin we purchase our seafood and prepare it at home because we just never know what or where the fish served in restaurants came from. So before you go out for an all you can eat fish fry, ask yourself what is it that they are frying and is it farm raised?
